Recipe 30: Pork Ribs Ingredients: -2 cups of brown sugar -1/2 cup of dry mustard -1 tablespoon of cayenne pepper -1 tablespoon of paprika -1 tablespoon of garlic powder -1 tablespoon of onion powder -1 tablespoon of salt -2 tablespoons of black pepper -2 slabs of pork spare ribs, 3 pounds/1.3kg each -BBQ sauce Instructions: 1. Remove the thin white membrane off the bone side of the ribs. Mix the sugar, mustard, cayenne pepper, paprika, garlic and onion powder, salt, and pepper into a bowl. Massage the rub into the ribs and let sit for 1 hour. 2. On the grill, place the ribs meat-side down next to some medium-hot coals that are roughly 225F/107C. Allow to cook for 1 hour. Every half our, turn ribs and baste with BBQ sauce. Allow to cook for 3-4 hours, or until meat is tender.
