    Recipe 30: Pork Ribs

    Ingredients:
    -2 cups of brown sugar
    -1/2 cup of dry mustard
    -1 tablespoon of cayenne pepper
    -1 tablespoon of paprika
    -1 tablespoon of garlic powder
    -1 tablespoon of onion powder
    -1 tablespoon of salt
    -2 tablespoons of black pepper
    -2 slabs of pork spare ribs, 3 pounds/1.3kg each
    -BBQ sauce

    Instructions:

    1. Remove the thin white membrane off the bone side of the ribs. Mix the sugar, mustard, cayenne pepper, paprika, garlic and onion powder, salt, and pepper into a bowl. Massage the rub into the ribs and let sit for 1 hour.

    2. On the grill, place the ribs meat-side down next to some medium-hot coals that are roughly 225F/107C. Allow to cook for 1 hour. Every half our, turn ribs and baste with BBQ sauce. Allow to cook for 3-4 hours, or until meat is tender.

    Recipe 31: Salted Caramel Cake

    Ingredients for the yellow cake:
    -2 1/4 cups of flour
    -1 1/2 teaspoons of baking powder
    -1/4 teaspoon of baking soda
    -1/2 teaspoon of salt
    -1/2 cup of 1% milk
    -1/2 cup of sour cream
    -1/2 cup of unsalted butter
    -1 3/4 cup of granulated sugar
    -1 1/2 tablespoons of vanilla extract
    -3 large eggs
    -2 large egg yolks

    Ingredients for the frosting:
    -3 cups of heavy cream
    -1 1/2 cups of brown sugar
    -3 tablespoons of corn syrup
    -1/4 teaspoon of salt
    -2 teaspoons of vanilla extract
    -Sea salt flakes for sprinkling

    Intructions:
    For the cake:

    1. Preheat the oven to 350F/180C. Prepare 3 8-inch/20cm baking pans and spray the bottom with non stick cooking spray, then line with parchment rounds. Spray parchment and sides of the pans.

    2. In a bowl, sift together flour, baking powder, baking soda, and salt. Whisk together and set aside. In a small bowl, whick together sour cream and milk, set aside.

    3. Preferably using an electric mixer, whip butter on medium speed until pale in color and fluffy (1 to 2 minutes). Add the granulated sugar and whip until lightened in texture and color (4 to 5 minutes). Add in the eggs and egg yolks, one at a time, beating well between each addition. Add the vanilla extract.

    4. On the lowest speed, add in 1/3 of the flour mixture and blend until almost combined. Add in half the milk/sour cream mixture until almost combined. Add in another 1/3 of the flour mixture and the last half of the milk/sour cream mixture and mix until almsot combined. Finish off with the last of the flour mixture and mix until fully combined. Make sure to use a spatula as you go to scrape down the sides of the bowl.

    5. Divide the batter evenly among the 3 pans, and smooth over the top with a spatula. Bake for 20-25 minutes until slightly golden around the edge. Resist the urge to constantly open the oven to check on it, as this could cause the center to fall and never recover. Let the cakes cool for about 10 minutes, then invert onto a wire rack, peel off the parchment paper, and let fully cool before icing.

    For the icing:

    1. In a large saucepan, combine heavy cream, brown sugar, corn syrup, and salt. (Mixture expands as it boils, make sure to use a saucepan much bigger than you think you need).

    2. Bring the saucepan over a stovetop and put on medium heat. Bring the mixture to a boil, constantly stirring until the sugar is melted. Increase to medium-high heat and keep stirring and boiling until the mixture thickens and turns a dark amber caramel color and registers at 230F-234F/180C. Stir in the vanilla extraxct, if using.

    3. Let the icing cool slightly, about 5 minutes, before using it to glaze the cake. remember the icing has to be very warm, enoguh for it to be pourable, but not too thin that it runs everywhere.

    Recipe 32: Biscuits and Maple Sausage Gravy

    Ingredients:

    For the Biscuits:
    -2 cups of flour
    -3 teaspoons of baking powder
    -1 tablespoon of sugar
    -1 teaspoon of salt
    -1/4 teaspoon of pepper (optional)
    -3 tablespoons of cold butter
    -1 tablespoon of shortening
    -3/4 cup of milk

    For the gravy:
    -1 pound bulk maple pork sausage
    -1/4 cup of flour
    -3 cups of milk
    -2 tablespoons of maple syrup
    -1/2 teaspoon of salt
    -1/2 teaspoon of ground sage
    -1/4 teaspoon of pepper

    Intructions:

    Biscuits:

    1. Preheat oven to 400F/204C. In a large bowl, whisk flour, baking powder, sugar, salt, and pepper. Cut in butter and shortening until the mixture resembles coarse crumbs. Add milk, stir until just moistened (about 30 seconds). Turn on to a lightly floured surface and knead gently 8-10 times.

    2. Pat or roll dough to 1 inch/2.5cm thickness. Cut with a lightly floured 2 inch/5cm biscuit cutter. Place biscuits 1 inch/2.5cm apart on an ungreased baking pan. Bake 15-17 minutes or until golden brown.

    Gravy:

    3. Meanwhile, in a large skillet brown sausage over medium high heat. Stir in flour until blended, then stir in milk. Bring to a boil, stirring constantly; cook and stir for 4-6 minutes or until gravy thickens. Stir in other ingredients and serve over hot biscuits.

    Recipe 33: Mixed Berry Muffins

    Ingredients:
    -2 cups of flour
    -1 cup of white sugar
    -1/2 teaspoon of salt
    -2 teaspoons of baking powder
    -1/3 cup of vegetable oil
    -2 eggs
    -2/3 cup of greek yogurt
    -2 cups of mixed berries (blueberries, blackberries, raspberries)
    -2 tablespoons of flour (for berries)

    Instructions:

    1. Preheat oven to 400F/204C. Line muffin cups with liners.

    2. In a bowl, whick together flour, sugar, salt, and baking powder. In a seperate bowl, whisk together oil, eggs, and yogurt.

    3. Add the flour mixture into the egg mixture and mix just enough to combine. In another bowl, mix berries with two tablespoons of flour, to prevent them from clumping. Add the berries into the batter.

    4. Bake for 20-22 minutes.

    Recipe 34: Country Style Squirrel

    Ingredients:
    -2 squirrels
    -Salt and pepper to taste
    -Flour
    -6 tbsp of olive oil
    -2 cups of water

    Intructions:

    1. Clean squirrels and cut into frying sized pieces. Rub with salt and pepper and roll in flour until well coated.

    2. Put squirrel into skillet of hot oil and fry until golden. Take out squirrel and most of the oil.

    3. Add water into the same skillet and bring to a boil. Add in squirrel, reduce to low heat, cover, and cook for approx 1 hour.

    Recipe 35: Smoked Bacon Wrapped Brisket with a Honey Slather

    Ingredients:

    Rub:
    -1/3 cup of salt
    -3 tablespoons of dry mustard
    -4 tablespoons of black pepper
    -1 tablespoon of minced garlic
    -1 tablespoon of onion powder
    -2 teaspoons of dried thyme
    -2 teaspoons of dried oregano
    -2 teaspoons of ground coriander
    -2 tablespoons of celery seeds

    Brisket:
    -1 5-6 pound / 2.2-2.7 kg flat brisket, trimmed
    -1/2 cup of yellow or brown mustard
    -2 tbsp of dark molasses
    -1 tablespoon of worcestershire sauce
    -8-10 strips of bacon
    -BBQ sauce for serving

    Instructions for Rub:

    1. Mix all that shit in a bowl. Set aside 1/4 cup of the mixture for the recipe, store the rest.

    Instructions for Brisket:

    1. Start up the smoker until fire is established, about 225F/107C for about 4-5 minutes. Season all sides of the brisket with the rub. In a small bowl, mix the mustard, molasses, and worcestershire sauce.

    2. Apply mustard slather evenly over all surfaces of the brisket. Place the brisket fat side down in the smoker, drape the top with bacon strips. Smoke for 1 hour.

    3. Increase the temperature to 255F/123C. Continue to cook the brisket until the internal temperature reaches 160F/71C, about 6 hours.

    4. Remove the brisket from the smoker and wrap it in a double layer of heavy duty tin foil. Return to the smoker and cook for an additional 2-3 hours, until the internal temperature reaches 204F/95C.

    5. Transfer the foil coated brisket to an insulated container and wrap it in thick, clean towels (old beach towels will work) and/or newspapers. Allow the brisket to rest for 1 hour.

    6. Remove the brisket from the foil, saving any of the juices, and shingle on a warm platter and drizzle with the remaining juices.

    Recipe 36: Scones

    Ingredients:
    -3 cups of flour
    -1/2 cup of white sugar
    -5 teaspoons of baking powder
    -1/2 teaspoon of salt
    -3/4 cup of butter
    -1 egg, beaten
    -1 cup of milk

    Instructions:

    1. Preheat oven to 400F/200C, lightly grease a baking sheet.

    2. In a large bowl, combine flour, sugar, baking powder, and salt. Grate the butter then mix it in. Whisk the egg and milk together in a seperate bowl then mix into the flour mixture until moistened.

    3. Turn dough on to a lightly floured surface and knead briefly. Roll dough out into a 1/2 inch/ 1 1/4 cm thick round. Cut into 8 wedges and arrange on baking sheet.

    4. Bake for 15 minutes or until golden brown.

    Recipe 37: Manicotti

    Ingredients:
    -1 pint (2 cups/16 oz./473 ml) ricotta cheese
    -8 oz/ 236 ml shredded mozzarella
    -3/4 cup (6 oz/ 177 ml) grated parmesan
    -2 eggs
    -1 tsp (.167 oz/ 4 ml) dried parsley
    -1 pint (2 cups/ 16 oz./ 473 ml) spaghetti sauce
    -5 1/2 ounces/ 162 ml manicotti pasta
    -salt and pepper to taste

    Instructions:

    1. Cook Manicotti in heavily salted boiling water until done, (9 min), drain and rinse with cold water. Preheat oven to 175C/350F.

    2. In a bowl, combine and mix ricotta, mozzarella, 1/2 cup (4 oz/ 118 ml) of the parmesan, eggs, parsley, salt, and pepper.

    3. Pour 1/2 cup (4 oz/ 118 ml) of spaghetti sauce into an 11x17 in/ 27x43 cm baking pan. Fill the manicotti shells with 3 tablespoons (1.5 oz/ 44 ml) of the cheese mixture and arrange over sauce. Top with the rest of the spaghetti sauce and sprinkle with the rest of the parmesan.

    4. Bake for 45 minutes, or until bubbly.

    Recipe 38: Pizza Margherita

    Ingredients:
    Dough:
    -1/4 oz/ 7 ml active dry yeast
    -1 tsp (.167oz/ 4 ml) white sugar
    -1 cup (8 oz./ 236 ml) warm water
    -2 1/2 cups (24 oz./ 709 ml) bread flour
    -2 tbsp (1 oz./ 29 ml) olive oil
    -1 tsp (.167 oz./4 ml) salt

    Sauce:
    -15 oz./ 443 ml canned tomato sauce
    -6 oz./ 177 ml tomato paste
    -1 tbsp (1 oz./ 4ml) dried oregano
    -1 1/2 tsp (0.25 oz./ 7 ml) minced garlic
    -1 tsp (.167 oz./ 4 ml) ground paprika

    Pizza:
    -6-7 basil leaves, torn in half
    -4-5 thick slices of whole mozzarella
    -olive oil as needed
    -salt and peper to taste
    - (Optional) Grated parmesan to taste

    Intructions:
    Dough:

    1. Preheat oven to 230C/450F. In a medium bowl, dissolve yeast and sugar in warm water. let stand until creamy, about 10 min.

    2. Stir in flour, salt, and oil. Beat until smooth. Let rest for 5 minutes.

    3. Turn dough out onto a lightly floured surface and pat and roll until round, Transfer dough to lightly greased pizza pan or pizza brick lightly sprinkled with corn meal. Add desired toppings (see sauce and pizza recipe) and cook for 15 minutes.

    Sauce:

    1. Mix that shit in a bowl.

    Pizza:

    1. Spread sauce over crust. Lay out basil leaves and mozzarella over the sauce, as evenly as possible.

    2. LIGHTLY drizzle olive oil over the pizza, making sure to get at least some on the outer crust and basil leaves. This will give the leaves a little extra crunch and the crust a decent amount of moisture. Add parmesan if desired.

    3. Bake for however long the dough says, cut up and serve.

    Recipe 39: Pan Fried Onion Rings

    Ingredients:
    -1 egg yolk
    -1 egg white
    -1 cup (8 oz./ 240 mL) club soda or beer
    -5 oz./ 150g flour
    -1 tsp (.167 oz./5 mL) baking powder
    -pinch of salt
    -2 onions
    1 qt (32 oz./ 946 mL) peanut oil

    Instructions:

    1. Beat the egg yolk. Add it into a bowl with the club soda/beer and mix. Sift together the flour, baking powder, and salt.

    2. Add the flour mixture into the egg mixture and beat until smooth. Whip the egg whites to soft peaks and fold into the batter.

    3. Peel the onions and cut crosswise into medium slices. Seperate into rings and keep in cold water if you're not going to use them immediately.

    4. If kept in water, drain and dry the onions. Heat the oil in a deep saucepan to about 176C/350F. Dredge the onions in flour, shake off excess, then dip a few into the batter at a time and fry until golden brown.

    5. Sprinkle with a little more salt on to the onions after they get out of the fryer.

    Recipe 40: Oven Baked Mostaccioli

    Ingredients:
    -1 pound/ 0.4 kg ground beef
    -1 meen green bell pepper, small dice
    -1 medium onion, small dice
    -32 oz/ 0.9 kg spaghetti sauce
    -8 oz (1 cup)/ 0.2 L chicken broth
    -salt and pepper to taste
    -1 lb / 0.4 kg mostaccioli pasta, cooked
    -2 tsp / 10 mL veggie oil
    -1 lb / 0.4 kg mozzarella cheese
    -4 oz / 113g parmesan cheese

    Instructions:
    1. Preheat oven to 350F/176C. In a large skillet, combine beef, bell peppers, and onion. Cook until beef is browned.

    2. Add spaghetti sauce and broth, bring to a boil and simmer for 5 min. Season to taste with salt and pepper.

    3. Pour half the meat mixture onto the bottom of a baking pan. Top with half the pasta, half the mozzarella, and all the parmesan. Top with the rest of the sauce, then top that with the rest of the pasta. Top THAT with the rest of the mozzarella. Bake for 30-45 minutes or until hot and bubbly.
